Chitosan is the second most abundant biopolymer in nature after cellulose, and is widely distributed, mainly in the shells of many lower animals, especially arthropods such as shrimps, crabs, insects, etc. There are also many types of Chitosan, such as HIGH Density Chitosan. It also exists in the cell walls of lower plants such as bacteria, algae and fungi. Chitosan can be produced by de-acetylating chitosan. The molecular structure of chitosan is similar to that of cellulose. Chitosan is in powder form, tasteless and odorless, with some pungency in aqueous solution. Chitosan is added to foodstuffs for heating treatment such as soup boiling and certain degree of frying and baking, and the structure has not changed.Chitosan Oligosaccharide is a kind of oligosaccharide product with polymerization degree between 2~20 obtained by degradation of chitosan by special biological enzyme technology, which is a low molecular weight product with better water solubility, large functional role and high biological activity.

Function and Application:
1. Chitosan has a wide range of antibacterial effects, but different concentrations of chitosan have different antibacterial ability.
2. Chitosan is a kind of dietary fiber, which has the effect of lowering serum cholesterol, regulating intestinal flora, lowering blood pressure and so on. After the human body ingests chitosan, it is almost not digested and absorbed, so it belongs to a kind of dietary fiber.
3. Chitosan and gastric mucin have similar physicochemical effects, with the inhibition of gastric acid, anti-gastric ulcer, anti-inflammatory effects, it is an anti-gastric acid polysaccharides, when in contact with water, swelling and development of viscous plasma and adhesion, in the stomach can form a protective film to reduce gastric acid on the ulcer surface stimulation.
4. Chitosan powder in the food industry is a natural, non-toxic preservative, flocculant, and can adsorb heavy metal ions such as cadmium, mercury and copper in water. Chitosan prices have declined as technology has developed. Chitosan for Feed is a common feed
